Located at Chigny-les-roses in a small Champagne village, the Champagne Maurice Lassalle you reception to make you discover within a framework convivial, pleasant, elegance of our Champagnes.

THE HISTORY


Grande Montagne de Reims 1er cru. The house was founded in 1930 by Marcel Lassalle with Maurice LASSALLE, the founder’s son, a vinegrower and winemaker in Chigny-les-Roses now in charge.
The vineyard is 35 years old on average and we do our own winemaking supervised by Fabrice Wehrung our oenologist and Epernay-based Martin Vialatte Oenological Institute.

Our vineyard extends over 3 1er cru-rated localities (oriented south, south-west, north and north-east) :

1 hectare in Rilly-la-Montagne (old vines)
2.75 ha in Chigny-les-Roses (old vines)
3.45 ha in Ludes (old vines)
Tous nos Champagnes sont issus de ces 3 secteurs géographiques. Sélection unique des 1er jus coulés (Cuvées) sur le pressoir traditionnel (Coquard) 4000 kg.
Séparation des moûts issus de 3 cépages : Pinot noir, Pinot meunier, Chardonnay.
Vieillissement des vins sur leurs lies pendant plusieurs années dans nos caveaux.









The Tasting Vault


A unique feature in Champagne, we have designed this friendly, comfortable cellar so our customers can enjoy a quiet tasting of our wide range of Champagnes.
We can accommodate groups of up to 6-8 for corporate sessions or receptions. TV and DVD are available.

The Press


Traditional 4,000 kg Coquard Press:
This square-shaped press equipped with 4 oak cages and 2 flaps contains 4,000 kg of grapes, extracting 25,50 hl of appellation Champagne. 4 people working with forks are needed to produce appellation juices and musts.
Must categories:
20.50 hl Cuvées (first pressing)
5.00 hl Tailles (second pressing)
0.50 hl Rebêches (third pressing)

First-juice Cuvées are stored in our winery to make our range of Champagnes.
Second and third pressing go to a distillery.

Cuvées are then racked to eliminate sediment from the must and stored in tanks for the first alcoholic fermentation (sugars transformed into alcohol).

The lightly rosé-tinted base musts will turn gold to pale gold after alcohoholic fermentation.
